Dairy Free Gluten Free Caramel Filled Chocolate Brownies

Preheat oven to 350 degrees F. Line loaf pan with parchment paper and set aside.

Let the dates sit in water for at least 30 minutes. Next, put the mixture in a high speed blender and blend over high heat until smooth. Set aside.

In a medium bowl, whisk together applesauce, egg whites, protein powder, cocoa powder, and baking powder (more chocolate chips if using!). Stir until smooth. Place half of the brownie batter in the prepared loaf pan and spread evenly. Next, place the date caramel on top of the first layer of brownie batter and spread with a frosting knife or the back of a spoon to evenly distribute it in one layer. Finally, place the other half of the brownie batter on top of the caramel layer and roll out until smooth.

Bake for 30 minutes. Remove from the oven and allow to cool completely before removing the brownies from the pan with the parchment paper, slicing and serving.
