Muffins are one of my FAVORITE baked goods. I love a sweet snack in hand that can be topped or filled with all kinds of goodies.

Obviously I’ve been on a pumpkin kick lately, so you KNOW pumpkin muffins are going to happen at some point. Special pumpkin chocolate chip muffins. 😉

Because chocolate goes with EVERYTHING.

These muffins are not only delicious, but also SUPER easy to prepare. They literally toss EVERY ingredient (minus the chocolate chips!) I have to love this easy cleanup. 🙂

These muffins are:

  • gluten free
  • non dairy
  • full of whole grains
  • high fever
  • no added sugar

They’re the perfect weekend meal prep snack for you (or your kids!) To enjoy all week long.

Preheat oven to 350. Line a muffin tin with 12 aluminum muffin cups and set aside.

Put ALL ingredients (except chocolate chips) in a food processor and puree them on high until smooth.

Spread the batter evenly in muffin molds and sprinkle with chocolate chips (the more, the better!).

Bake for 30-35 minutes. Remove from the oven and allow the muffin to cool completely on a wire rack before serving!
