Turkey burger with kale and mushrooms

What you need:

  • 8 burger buns, preferably wheat

  • 1/2 kg ground turkey

  • 4 Baby Bella Mushrooms

  • 2 cups fresh kale

  • 1/4 cup chopped sweet onion

  • 2 tablespoons olive oil

  • 1 tablespoon finely chopped fresh oregano leaves

  • 1 tablespoon chimichurri sauce

  • 1/4 teaspoon minced garlic

  • 1/4 teaspoon salt

  • Avocado slices for serving

Heat the olive oil in a pan over medium-high heat and sauté the onion and garlic until soft. Stir in the mushrooms and kale, then cover and cook until the vegetables are tender. Let cool down. When ready, combine the mushroom and kale mixture with ground turkey and season with oregano, chimichurri, and salt. Shape into patties with clean hands. Cook on a preheated grill over medium-high heat, turning once, until desired doneness is achieved. Spread the rolls with sauce of your choice and then top with turkey patty and avocado slices.

Honey Yoghurt Grilled Peaches

What you need:

  • 3 peaches, halved and stoned

  • 2 cups plain Greek yogurt

  • 1/4 cup honey

  • cinnamon powder

Mix Greek yogurt and honey in a small bowl. Put aside. Cook the peaches cut-side down on the preheated grill over medium-high heat until grill marks appear. When ready, garnish the grilled peaches with honey and yogurt. Sprinkle with cinnamon powder before serving.

Grilled beef and sweet potato wraps

What you need:

  • 6 whole wheat tortillas

  • 1/2 kg rump steak, thinly sliced

  • 6 cups diced sweet potatoes, steamed

  • 3 cups thinly sliced ​​cabbage

  • 1 cup thinly sliced ​​white onion

  • 1 cup thinly sliced ​​fresh basil

  • 3 tablespoons lime juice

  • 3 tablespoons low-sodium soy sauce

  • 2 tablespoons canola oil

  • 1 1/2 teaspoons chili garlic sauce

  • 1 teaspoon brown sugar

On a preheated grill, cook the beef over medium-high heat until just cooked through (slightly pink in the center), about 2 to 3 minutes per side. To make the dressing, combine the lime juice, soy sauce, canola oil, chili garlic sauce, and brown sugar in a glass jar and shake to mix the ingredients well. Place the cabbage and onion in a bowl and toss with half of the dressing. Arrange grilled beef, sweet potatoes, and coleslaw on a serving platter. Drizzle beef and sweet potatoes with remaining dressing. Serve with tortillas.
