  • 2 1/2 cups shredded pepperjack cheese

  • 2 cups of milk

  • 1 3/4 cups low-sodium chicken broth

Stir in the onion and garlic and cook an additional 3 minutes or until the onion is soft. Slowly add milk and chicken broth and bring to a simmer over medium-high heat. Reduce heat and continue to simmer until mixture is smooth and thick, about 15 minutes. Remove from the heat and stir in the grated cheese. Season with Worcestershire sauce, hot pepper sauce and black pepper and stir. Top with coriander leaves.

Pumpkin Curry Soup

What you need:

  • 1 butternut squash, peeled, seeded and cut into 1-inch pieces

  • 4 garlic cloves, chopped

  • 1/4 teaspoon cayenne pepper

Melt butter in a saucepan over medium-high heat, then sauté garlic and onion until soft. Stir in the pumpkin, chicken broth, curry powder, salt, cumin, and cayenne pepper. Bring to the boil, then reduce the heat and simmer until the squash is tender, about 15 minutes. When done, remove from the heat and then add half and half and the honey to the mixture. Blend the soup in batches in a blender or food processor until smooth. Transfer to serving bowls and garnish with sour cream.
