While pumpkin season never really starts or ends in my book, I definitely try harder to share pumpkin snacks and goodies with all of you in the fall. Today’s recipe perfectly encompasses everything you can love about autumn flavors!
These soft-baked, dairy-free, gluten-free pumpkin bars will be your new favorite healthy snack for autumn! They’re super easy to make, high in protein, and no added sugar.

instructions
Preheat the oven to 350 degrees F. Spray an 8 × 8 baking square with cooking spray and set aside.
Put all ingredients in a food processor and blend until creamy at the highest level. Stir in nuts or seeds if used.
Pour the batter into the baking square, making sure that it is evenly distributed. Bake for 35 minutes.
Take out of the oven and let cool down completely before slicing and serving!
