Collect food recycling program

I recently had the chance to sit down with UNH nutritionist Rochelle L’Italy to discuss the Gather Food Repurposing Program launched two weeks ago. This new program is a collaboration between UNH Dining, the UNH Nutrition Department, Gather NH and so many other departments on campus. Essentially, this program is about saving food that is still good but not meeting “commercial standards” and preventing it from ending up in the trash or compost heap. Once the food is saved, it is taken to the Barton Hall kitchen, where it is converted into either a new dish or sauce and distributed to the community through pantries and soup kitchens.

Eventually, the program will work more on keeping food on campus to tackle the food insecurity of UNH students.
